French Green Beans with Bacon Chips

1 bag of french green beans (regular fresh green beans is fine)
4-5 strip bacons (sliced)
2 sliced shallots
4 minced cloves of garlic
1 tsp. sesame oil
1-2 tbsp. oyster sauce
salt & pepper to season
1 big bowl of ice cold water with lots of ice cubes

Blanch the green beans in boiling water for about 3 minutes. Then take them out and put in the iced cold water to stop the cooking process immediately. This will make the green beans very crunchy and gives it that vibrant green color. When they cool down, drain it well and put it in the fridge for about 5-10 minute while you prep the other stuff.

In a hot wok/pan, saute the bacon until crisp and set it aside to cool.

bring pan back to stove, drizzle some good olive oil/cooking oil and saute the sliced shallots and minced garlic until aromatic. Drizzle in the sesame oil and oyster sauce and bring it to a sizzling point. Take out the beans from the fridge and pour it in immediatley. Toss it to evenly coat the beans. At this point, salt & pepper to taste.

When done, plate the green beans and top it with the crispy bacon chips and serve! They’re so crispy with a bit of salt/sweetness to it that it can be eaten like chips!
