Beef & Bamboo Green Curry

Ingredients
1/2 lb. sliced beef
1 packaged of bamboos (rinsed and sliced)
1 can coconut milk
1 can of green curry paste
1 small onion sliced (unfortunately I ran out of yellow onion so I had to use red onion)
1 1/2 cup water
2 tbsp. fish sauce
2 tsp. sugar

Directions

Sauteed the sliced onions with some oil in a hot pot

After the onions sweat a bit, put the entire can of green curry paste and sauteed for another 5 minutes

Throw in the sliced bamboos and let it cook for another 5-10 min. I like the burnt taste of bamboos so I cook it for a bit longer than needed 🙂

Now pour in the coconut milk and 1 1/2 cup of water. Once it’s at a boiling point, put in the beef and let it cook until tender but do not overcook. It will get chewy. Yuck!

I would recommend serving this over white rice instead of bread, but since I had no rice… bread will have to do. Enjoy!
